The baby aubergine is a vegetable that deserves a lot of care and effort, both in terms of cultivation and harvesting, which is done strictly by hand. It is harvested very small, about 20/25 g, when it is at its best stage of ripeness. It has a slightly elongated shape and an intense purple colour, with a very sweet taste. We make stuffed baby aubergine boats by hand, filling them with any ingredient.
They are low in calories and fat, and contain potassium, Vitamin A, Vitamin C, phosphorus and calcium. The peel of aubergines contains substances beneficial for the liver, pancreas and bowels. It also enhances the increase in bile production, stimulating its release by the liver cells and facilitating digestion, improving liver function and reducing blood cholesterol.
HOW TO USE
cook the frozen product in boiling water for 3 minutes, fill as desired and, if necessary, complete in the oven at 180°C considering the cooking times for the filling.
