Wild chicory, widespread in our area in autumn and winter, is an edible plant with positive effects on the health and was used as food in ancient times. It was already known by the ancient Egyptians and the ancient Romans and was mentioned by Horatius, Virgil, Ovid and Pliny the Elder.


As far as its nutritional properties are concerned, wild chicory contains some B vitamins, Vitamin C, K and Provitamin A, mineral salts and is rich in medicinal properties. The nutrients contained in wild chicory are the cause of its bitter taste, stimulate liver and kidney functions and have a detox effect, contributing to increasing the general wellbeing of our body. With a low calorie content and extremely versatile, it is the main ingredient of many traditional recipes of the Apulia region and maximises our taste experience.
